The little greenie

This past week we went blueberry picking and the berries were luscious and deep blue. One little “greenie” found its way into my basket of berries. I had to snap a photo of this little miracle…it soon turned blue by the light from my kitchen window & was nibbled up with the rest. Sometimes things just need a little extra time and sunshine.

As soon as the berries were washed, John requested that I make blueberry boy-bait…he claims this is why he married me…and I am sharing one of our family classics so you can bring some good loving into your home, too…

Blueberry boy-bait

Blueberry “Boy-bait”

 Mix together:

¾ cup sugar

¼ cup soft butter

1 egg

½ cup milk

Add:
2 cups flour
2 teaspoons baking POWDER
½ teaspoon salt

Gently fold in2 cups blueberries  (You can use fresh or thawed & drained frozen. I like to be crazy & use mixed berries, too! )

Spread into a 9 inch circle or 9×9 inch square pan that has been evenly coated with nonstick cooking spray (or you can go all the way and grease & flour the pan, but I never have time to do this). Top with the following:

Topping:
Use a pastry blender or fork to mix until crumbly:
½ cup sugar
1/3 cup flour
1 teaspoon cinnamon
¼ cup soft butter

Sprinkle over top of the cake.

Bake at 375˚F for 45 minutes. Don’t over bake as it will be dry! Serve warm for breakfast or as a dessert with freshly whipped cream or vanilla ice cream. Always a crowd pleaser and better yet, your honey will be smiling!

If you double the recipe, bake it in a 9×13 inch cake pan and bake for 50-55 minutes–just check the middle with a toothpick to see if is done. This is a great thing to bring to office parties or picnics because it is easy to serve and travels well.

    Help with formatting! How do WP entries become double spaced? I couldn’t get rid of that in this recipe (see the beginning). Okay, gurus…what can I do to not double space?
